Our Santenay 2011 offers an imposing bouquet of apricot and exotic fruits, mango and pineapple to the fore, sublimated by the notes of brioche and oak from fermentation and ageing for 16 months in Burgundy oak barrels. After swirling, vegetal aromas of mint, rose and sage speak volumes of this wine’s complexity. The palate offers powerful harmonies of well-ripened yellow fruits on a music-like score that is all voluptuousness and vivacity, long and persistent on the fruit. This rich and exuberant wine is self-sufficient, but the match with a foie gras or an old Comté cheese has already been tried and tested, and a little courage will allow an encounter with Japanese cuisine or white meat tajines.
Maranges Blanc 2011

Reticent at first, the nose of this Maranges exhales little by little, as if to reveal its secrets while controlling their impact, a discreet oakiness and notes of honey, mint, ginger and saffron. The palate, unlike previous vintages, displays its elegance rather than its power, with an almost ethereal structure of silky and fresh yellow fruits. The tasting is surprising in its precision, and proceeds without deviation to a lively lemony finish. Preferably to be drunk in its youth and in its own style, this great chardonnay from the Côte de Beaune will be unanimously approved with langoustines or scallops in cream sauce.
Bourgogne Hautes Côtes de Beaune 2011

Our Hautes Côtes white develops a still discreet bouquet of citrus and mint on a theme of yellow peaches. This is followed by a lovely and lively palate, all in the simplicity of yellow fruits, culminating in a length that is full of vivacity, peach and lemon. Very successful with river fish or a platter of freshwater crayfish, it can be measured against a classic dish of Burgundy snails, ideally after light decanting to let it open.

Our Aligoté shows two well-developed personalities for this 2011 vintage. On the nose, complex aromas of elderflower, iris and mint mingle with notes of tea and honey, with a mineral base always present. However, tasting gives way to the lively and frank expression of citrus fruits and pear, culminating in a mineral finale to perfection. This Aligoté is fully at home with cheeses and fish à la meunière, and will impudently withstand long moments in cellar.
